Our Bin Number 2 - Happy May Day! ...

Welcome
to the 2nd edition! We hope everyone is enjoying their spring and
early summer... All of our students are counting the days, &
flower shops & all are gearing up for graduations... For the
rest of us, its just nice to enjoy sooo much sunshine this time
of year!
Certainly something to raise a glass and toast to!

Thanks
to all who commented to our first letter... with a positive word,
encouragement, complements to our website, & feedback. ;)
We constantly work on improving and striving to do our best, &
always love to hear it all, so mahalo a nui!

(a belated) Happy Earth Day/Month!
As
a company and organization, we try to act as environmentally conscious
as we can, & are personally committed to doing our small part.
All the recently escalating attention over global warming simply
highlights something that has been building for decades - we do
affect the world around us, which will come back to affect us. So
lets all do our parts, & commemorate with a toast to try and
do something about it!
For
our part, we would like to encourage you to do something - RECYCLING!
For One - do your part & bring those bottles & cans to your
nearest recycling place. With or without the five cents!
For Two - if you are a past winemaker, re-use your old bottles for
your next bottling! As an added incentive, if you do, we'll
give you a $10 credit towards your next barrel! (thats sure
better than 5 cents a bottle!)
For Three - you are always welcome
to recycle your wine bottles from us here with us anytime.
Stipulations... The bottles must be rinsed clean & the label
stripped (simply soak the bottle for 5 minutes in hot water
and it should easily come off!) No trash in the bottles please.
There must be at least 2-cases / 24-bottles for the discount to
apply. And try to only use our WTX bottles. Some standard commercial
bottles might be ok, but others will not fit our corker & our
foiler - so that is your chance. If you can drop off the bottles
at least 1 week ahead, we can be sure to have them ready when you
arrive.
On
a personal aside - congratulations to our winemaking 'bird friends',
for getting Manu o Ku, the threatened White
Tern (Gygis Alba), named as the official bird of the City and
County of Honolulu! You know who you all are & keep up the good
work!

Wine updates! ...
We
sadly said good-bye to our last batch of the Oregon Yamhill County
Pinot Noir. If you still have bottles or a barrel in the making,
I recommend saving a few for a next year celebration. It will be
a lovely velvety treat. Also, we just (yesterday) found out the
Premier
Santa Ynez Syrah is now discontinued, so the remaining
8 we have is all we'll get. If you want it, come &
get it.
If
you were a fan of the dense cherry fruit and distinctly smoky earth-iness
of the late Oregon Pinot, we have you a new treat. We recently bottled
our Limited Australian Grenache-Mourvedre, & it is
a delicious reincarnation! A little heavier bodied, with lush black
cherry fruit, mouthy jam, & a lovely dose of clove spice. We're
all smiling.
Another
note - we only have 2 Limited Australian
Verdelho left. This was a joyful surprise - full of crisp melon
fruit, bright citrus & a refreshing acidity. It flew off the
shelves, so if you want any of this light fruity yet dry delish
summer wine, now is the time.
We have THREE
special batch
treats.
1) Oregon Yamhill Pinot Gris Toasted - little hints of caramel
vanilla match nicely to the green apple pinch of this crunchy white.
2) Aussie Shiraz Bin 4 - we heated this one up a notch! a
nice dense mouth filler, packin a whopping 16% abv. (limited!
only 4 available)
3) Pacific Chardonnay Bin 2 - made in the same style as
our classic Pacific Chardonnay, but fermented with a different yeast
strain! comparitively, loads more tropical fruits to it, & the
usual extra oak aging is tempered by that flavorful abundance of
orange and pineapple, while still retaining its subtle butterscotch
and creamy finish. as Melissa says, "it finishes like an orange
creamsicle". :) . this one won't be added to the regular list,
so if you want it please ask!

We
are excited to announce that Melissa Carr is our new Assistant Manager!
Melissa
has been with our ohana for almost two years now, & we are thrilled
and honored to have her in this new capacity.
Its always
a pleasure.
